Pumpkin Perfect: 4 Great Pumpkin Treats

Pumpkin may just be South Africa’s favourite ingredient, and that’s not just because a patch of it makes us all nostalgic. Such an unassuming vegetable, although not inconspicuous, is a source of rich antioxidants and vitamins… but that’s just the boring stuff. Did you know that the pumpkin is actually a vine – not unlike cucumbers and squash? But let’s put all these little facts aside and bite into some delish pumpkin treats.

Pumpkin Bread

Without a doubt, the unmistakable wafts of a pumpkin loaf baking drags us kicking and screaming to our time as kids – and today we can share these memories with our own kids. Whether for a potluck, school event or holidays, the sweet smelling autumn spices and cinnamon accompany this easy-to-make (if you can mix, you can dig into this recipe) loaf takes around an hour to complete, from the oven to serving up a plate of loving.

Pumpkin Soups

From a fine hot sliced pumpkin loaf, to its accompanying pumpkin soups. Pumpkins are incredibly versatile as a soup, where you can pretty much get away with any sort of experimental additions. Our two favourites have to be shavings of parmesan crisps with a dash of red chilli or the oh-so-chunky chickpea and ginger variation. As a serving idea, why not carve out a few pumpkins into makeshift bowls and presto, soup direct from the source – definitely delicious.

Pumpkin Pie Spiced Soft Fudge

And on to desserts, and this one is unbelievable! Gluten-free, dairy-free yet smooth, soft and deceptively creamy, the main ingredient for a pumpkin pie spiced soft fudge is the fresh roasted pumpkin. The coconut butter gives it a taste that definitely feels like cheating, but without the guilt. If you want to add in a bit of “oh no I shouldn’t be doing this” then toasted and coarsely chopped macadamia nuts are going to infuse this dessert with an irresistible scent.
